Sundarban honey is collected seasonally by traditional honey hunters (mouals) who harvest wild hives deep in the mangrove forest — a practice that has continued for generations. Because it's wild-collected rather than farmed, quality and flavor vary slightly by season and flower source (mostly khalisha and goran blossoms).
The clearest sign of raw, unadulterated honey is crystallization — pure honey naturally turns grainy and semi-solid in cooler weather because of its natural sugar (glucose) content. This is not a defect; a gentle warm-water bath restores it to liquid form without damaging quality.
Adulterated honey (cut with sugar syrup) tends to stay liquid indefinitely and pours thin and fast. It may also taste flatter, without the complex floral notes of raw forest honey.
